There is always great argument about whether this dish should have cream in the liquid or not. Please yourself.
Soak the mussels in fresh water to remove any sand. Scrub them well, pulling away the ‘beards’. Discard any broken mussels or mussels that will not close when tapped lightly on the sink edge. Put the cleaned, still wet, mussels into a large saucepan and add the white wine, chopped onion and half the parsley.
