This dish can be served either as a hot or a cold starter. If it is served cold, quartered peeled tomatoes are a good addition.
First fry the onion in a little of the olive oil until soft but not coloured. Add the garlic and the chunks of mackerel. Shake over a moderate heat until the mackerel is cooked. With a perforated spoon, lift the mackerel on to a serving dish. Put the sliced mushrooms into the frying pan with a little more olive oil if necessary.
