The whole secret of good hamburgers is good beef to begin with, and plenty of seasoning. A basic hamburger should simply be minced beef steak, with a small proportion of beef fat in it, salt and pepper. But variations are frequent, many people adding Worcestershire sauce, mustard, finely chopped onion, chopped herbs, and frequently rusk or other cereal binder to make the meat go further. This recipe seems to me the best. It makes 4 good-sized burgers.
