Ingredients: ½ teaspoon cumin seeds or a good pinch of ground cumin; ½ teaspoon cumin seeds or a good pinch of ground cumin; ½ teaspoon dried oregano or a good teaspoon chopped fresh marjoram; good pinch of nutmeg; 1 bay leaf; 1 tablespoon tomato purée; 1 teaspoon sugar; 1 clove garlic, crushed; ½ teaspoon dried oregano or a good teaspoon chopped fresh marjoram; 1 (396-g/14-oz) can peeled tomatoes; 1 onion, finely chopped

Method

Simmer all the ingredients together until a syrupy consistency is obtained, then push the sauce through a sieve. If it is liquidised in an electric blender the tomato seeds will still be present but the sauce will taste just as good.
