Of course good bought sausages can be used for this recipe but they’re becoming more and more difficult to find, most of them tasting of nothing but preservative. And making your own sausages is as easy as winking, especially if you are prepared to dispense with the sausage casing. I find them better without skins anyway.
To make the sausages, simply combine all the sausage ingredients and season very well. Form into sausage shapes using floured hands to stop the mixture sticking. Fry the sausages in butter in a heavy frying pan, turning them frequently to brown evenly all over. When they are cooked remove them to a plate and keep warm.
