Making your own pasta is very satisfying and pleasurable. It is not difficult but you need plenty of table top, and a not-too-busy morning.
Sift the flour on to the table top. Make a well in the middle and into it break the eggs and add the salt and oil. With the fingers of one hand work the eggs together, gradually bringing in the flour and kneading to a stiff paste. You may need to add a tablespoon or two of warm water to get an adhesive dough.
