This recipe is essentially noodles with garlic and basil, but the addition of Parmesan cheese and pine nuts makes it rich and substantial enough for a main course. I think it is my favourite food in all the world. Italians argue about the authenticity of a recipe with Parmesan instead of Pecorino, or whether it should be made with or without the pine nuts (or walnuts which are sometimes used), but such esoteric nonsense is not for us. Just make the pesto, and enjoy it. It keeps for a month
