Memories of school dinners have jaundiced our attitude to this pudding, but properly made it can be an absolute delight.
Spread the bread slices liberally with butter. Butter a fairly shallow ovenproof dish. Cut the bread across into triangles and lay these triangles, only slightly overlapping, in the dish, butter side up. Sprinkle with the currants and sultanas and a teaspoon or so of sugar. Mix the eggs with the extra yolk, the milk and the vanilla essence. Taste and add enough sugar to make it barely sweet. St
