  • 100 g/4 oz butter
  • 4 tablespoons golden syrup

Method

In a heavy frying pan or shallow saucepan melt together the butter, syrup, brown sugar, marmalade and mixed spice. Add the quarters of apple and boil rapidly until the toffee is a good brown, and the apples are tender. Add the orange and lemon rind and juice and tip carefully into a shallow ovenproof dish. Keep hot.
