If the kipper fillets are frozen allow them to thaw before you begin, then skin the fillets and put them in a deepish dish. Add everything else, turning the fillets so that they are well coated in oil and lemon juice.
Leave them in the fridge (covered with polythene wrap or some such to prevent everything else in the fridge tasting of kippers) for as long as you can - 3 days is not too
