People very often muddle up the terms, vol-au-vent and bouchée. Strictly a bouchée is a mouthful-sized pastry case, made in the same shape and in the same way as a vol-au-vent.
A vol-au-vent is either a one-portion pastry case about 7–5 cm 13 inches in diameter, or a large pastry case used for serving more than one person. Most vol-au-vent and bouchée fillings are savoury rather than sweet.
