This is a fairly simple fruit salad, the only exceptional thing about it being the addition of China tea to the syrup. Any fruit can be used, but the following combination is very good.
First prepare the syrup: put the sugar and the water on to boil together, setting over a gentle heat at first so that the sugar dissolves before the water boils. As soon as it is boiling well, pour it directly on to the tea leaves in a bowl. Allow to get stone cold.
Meanwhile prepare all the fruit as you would for a fruit salad, halving the grapes and taking the seeds from them, cutting
