Put the water and sugar together in a fairly deep narrow saucepan - just wide enough to take the pears side by side. Bring slowly to the boil, stirring until the sugar is dissolved. Peel the pears, leaving the stalks on. As each pear is peeled drop it into the boiling syrup. Allow the syrup to boil fast so that the bubbles completely cover the pears. This will prevent discolouring.
