It is difficult to give exact quantities for this recipe, but it is extremely simple to make. The basic principle is to achieve layers of cooked sweetened apple, alternating with layers of crisply fried breadcrumbs, arranged in the form of a cake.

Ingredients

  • about 75 g/3 oz butter
  • 1 kg/2

Method

Heat a tablespoon of the butter in a frying pan and fry the apple pieces in it fairly briskly until they are beginning to soften, and looking a little brown. Tip them into an ovenproof dish of some sort. Then flavour them with the sugar, lemon rind and a sprinkling of cinnamon. Cook them in a slow oven until they are tender, but not broken up.
