Many a cook is nervous that a soufflé will become overcooked if the guests keep dinner waiting.

A soufflé will sit perfectly happily in an oven for 10 minutes or so if the door is left open a crack and the oven is switched off. This will slow down further cooking though, unfortunately, will not prevent it completely. The soufflé only starts to sink when brought out into the cold air, or when a cold serving spoon is plunged into it.
