Fillet is the classic steak for this dish but costs a fortune. Rump is excellent, and skirt will do very well. It seems that almost anything else can go into a steak tartare according to the likes of the diner. All the ingredients listed with ‘optional’ after them are the ones I disapprove of, but which many people insist on.
