This fruit salad is particularly good served with a ginger syllabub mixture instead of whipped cream. If it is served on its own, a dash of Kirsch in the syrup is good.
Make the syrup first. Put the sugar and water together in a saucepan and bring slowly to the boil. Once the sugar has melted, boil the syrup rapidly until it feels slightly tacky when tested between finger and thumb. Add the lemon juice and allow it to cool. Prepare the fruit, dropping it straight into the syrup to prevent discoloration. Chill well before serving.
