This recipe is made from the same mixture as the more usual brandy snaps, but instead of being rolled round a stick to form a cigarette shape, they are moulded to form small cups which are then filled.

Ingredients

  • 100 g/4 oz sugar
  • 100 g/4

Method

Set the oven to moderate (180°C, 350°F, Gas Mark 4). Grease a baking tray, the blade of a palette knife and one end of a wide rolling pin or a narrow jam jar or bottle.

Melt the sugar, butter and syrup together, then remove from the heat. Sift in the flour, stirring well as you do so. Now add the lemon juice and the ginger and put the mixture out on the baking tray in small teaspoonfuls
