Break the cakes up roughly and put them in a bowl. Boil the water with the sugar and when the sugar is dissolved pour on to the coffee and mix well. Add the rum and pour over the cake. Mix with a fork or your hand, taking care not to mash the cake too much - you want a marbled half-white, half-brown effect. Then press the mixture into a pudding bowl and put a weight on top.
