Walnut and Lemon Meringue Cake

• 4 egg whites
• 250 g/9 oz castor sugar

Line the bottom of two 20–23-cm/8–9-inch sandwich tins with rounds of greaseproof paper and brush them out with melted butter. Shake a little castor sugar round the sides and base to give an even coating.<
