This is such a simple recipe that I hesitate to include it, but it is an attractive way of presenting a fresh pineapple, and its simplicity does not detract from its excellence.
Lay the pineapple down on a board. With a sharp knife cut off a slice from the top (which will include the leaves) and a slice from the bottom, which will enable the pineapple, when you have put it back together again, to stand up.
