This Iranian variation on the Russian pirozhki (small pie) has many forms. It can be large or small, savory or sweet. As school kids in downtown Tehran, we’d buy them to eat as snacks. We’d choose the sweet ones, usually custard filled. But more often pirozhkis are savory, and filled with meat, potatoes and mushrooms. You can use half a pound of ground meat instead of pistachios.
