I adapted this recipe from one demonstrated to me by Om al-Kolsum in her small kitchen above the olive store in Rudbar. She said, “Just use any aromatic herbs you have, chopped with onion and garlic. Add a little ground meat or fish, salt, pepper, and turmeric and use a little rice flour and an egg to bind it all together.” Then she started frying the patties in olive oil and flavored them with a drizzle of pomegranate molasses, which I think was the secret of this dish.
