This is a very popular green herb salt called dalar. Traditionally it is made in a namak-yar, a stone mortar and pestle used for grinding the herbs with the salt. Dalar is used in place of salt to bring out the flavor in cucumbers or any sour fruit. Sometimes it is mixed with vinegar, lime, and sugar to make a sauce for dipping lettuce or to flavor a puree of sour plum/aloucheh feshkan. Dalar is also well-known as a craving during pregnancy in this region.
