This dish is traditionally made with sib-torsh, a local Caspian sour apple, or sour plum, but the version I’ve given here makes a good alternative. I particularly like the taste and texture of Fuji apples and cucumbers combined with a little lime juice.

Ingredients

  • 4 Fuji apples, peeled, cored, and diced into 1in/2.5cm cubes
  • 5 Persian cucumbers, diced into 1in/2.5cm cubes
  • 5 tablespoons

Method

  1. In a large salad bowl, combine all the ingredients and toss well. Adjust the seasoning to taste by adding more lime juice or green salt. Nush-e joon!
