Method

  1. Roast the eggplants and prepare as above.
  2. In a medium-sized cast-iron pot, heat the oil and sauté the onion and garlic for 10 minutes.
  3. Place the onion mixture, the eggplant, walnuts, tomatoes, and spices in a food processor and pulse until pureed.
