Around the Caspian, they love to use fresh green garlic chives (allium tuberosum), a perennial bulbous plant unlike either onion or garlic. It has strap-shaped leaves and straight, thin, white-flowering stalks that grow much taller than the leaves. The flavor is more like garlic than chives. Locally, it’s sometimes called sir-abij.
