  • About

Many Iranian recipes start by caramelizing onions. Slow-cooking them brings out their sweetness, enhancing the flavor in a savory dish.

Ingredients

  • 2 tablespoons oil, butter, or ghee
  • 4 small onions, peeled and thinly sliced along the grain

Method

  1. Heat the oil in a wide nonstick skillet over low heat, until hot but not smoking, add the sliced onions and sauté for 30 to 40 minutes, stirring occasionally, until golden brown and caramelized.
