Rinse the greengages thoroughly in a colander, place in a medium-sized saucepan and bring to a boil over high heat. Reduce heat to medium, cover, and simmer for 10 minutes or until the greengages are soft. With a long-handled wooden spoon stir for a few minutes to loosen the pits and skins from the flesh.
Drain in a large fine-mesh colander over a medium-sized
