  1. For the zucchini: Heat the oil in a wide skillet and sauté the zucchini on both sides until golden brown. (You can otherwise bake the zucchini. Line a sheet pan with parchment paper and spray it evenly with oil. Arrange the zucchini slices side by side on the sheet pan and spray with more oil. Sprinkle a pinch of salt on top. Bake
