I have adapted this recipe based on what Rahman Khanum showed me. Keep in mind that traditionally the herbs are added in step 3 with the osh, but I prefer to add them in step 6 at the end of the cooking process. This results in a greener, fresher osh. In Hamadan, they make the same osh but add kidney beans.
