Lamb’s liver kabab is a popular street snack that is available from early in the morning to late at night in most cities in Iran, but those from the street stalls in Tabriz are some of the best I’ve had. Lamb’s liver is smaller and tastier than calf’s liver (though you can substitute the latter). It’s a little harder to find in the U.S., but you can order it from specialty butchers.
