Ingredients: 2 cups/360 g bulgur; 2 tablespoon panko breadcrumbs; 6 cloves garlic, peeled and grated; ½ cup/120 g liquid kashk + 2 tablespoons for garnish; ½ teaspoon turmeric; ½ teaspoon freshly ground pepper; 2 tablespoons dried mint flakes; 2 tablespoons oil; 1 teaspoon turmeric; 8 cups/1.9 l broth or water; 1 lb/450 g Armenian cucumbers (available in Asian supermarkets) peeled, seeded and sliced into 2in/5cm lengths (if you use Persian cucumbers there’s not need to peel or seed them); 2 teaspoons fine sea salt; 1 cup/200 g lentils, soaked for 30 minutes, drained, and rinsed; 2 medium onions, peeled and chopped; 1 teaspoon Hamadani seven-spice advieh

About

Curly cucumbers, known as Armenian cucumbers/khiyar chambar, are not in strictly cucumbers (in the gourd family) but part of the melon family (C. melo). Up to 18in/45cm length, pale green, and slender, they like long cucumbers, however. This osh is a specialty of Hamadan but is also popular in Arak. In Khorasan, it is made with lots of spinach instead of the curly cucumbers, and the kashk is replaced with yogurt. I prefer the vegetarian version of this osh
