This recipe may be made up to 24 hours in advance and stored, covered, in the fridge. Reheat or allow it to get to room temperature before serving. Variations of this dish are made all over Iran: Khorasan, Arak, Kerman, and Shiraz. My stay in Los Angeles inspired me to use this spread combined with Onion, Cucumber + Coriander Pickle and fresh herbs to make a taco to die for.
