Taftun is an everyday medium-thick flat bread. It’s ideal for dunking into soup or using for croutons. In Hamadan, they call it gerdeh (meaning “the round one”). They brush it with egg wash and sprinkle seeds over it—fenugreek, sesame, and nigella—before cooking.

  1. For the dough: In the mixing bowl of an electric dough maker or mixer, dissolve the yeast in the warm water, add the honey, mix together, and allow to rest for 10 minutes undisturbed.
  2. Add the yogurt and egg mixture, and 3 tablespoons of the oil. Mix well until smooth.
