I made this deliciously semi-sweet bread with Layla Khanum (in the photo opposite) in her backyard in a half-sunken earthenware oven/tanur under an old lime tree in Bushehr. Her face was full of dignity, the deft movements of her skilled hands reflected years of practice, and the bread, hot out of the tanur, was to die for.
