Lorestan, an Iranian province south of Kurdistan and north of Khuzestan, is the land of the Lors and lies in the heart of the Zagros Mountains. The Lors were nomads, and some continue to be so to this day. This recipe, a Lori specialty, has a very distinctive taste and is little known outside the region. All the grinding is traditionally done by pounding, but I’ve suggested using a food processor here. Try this recipe. You will be delighted by how tasty it is. I adapted it from Khanum-e Mor
