I adapted this spice mix from one by Behjat Shahverdiani. It’s an excellent mix for rice.


  • 2 tablespoons black pepper corns
  • 2 tablespoons nigella seeds

  1. Grind all the whole spices, each separately, in a spice grinder. Transfer them to a small bowl as you grind them.
  2. Add the ready-ground spices and use a spoon to mix well.
  3. Transfer to an airtight glass jar and keep in a cool place to use as needed. Nush-e joon!
