Osh-e jushvareh, also called jush pareh, is a traditional dumpling osh In Sabzevar, they serve it for ceremonies such as the Wednesday eve of the New Year/shab-e chahar shanbeh suri. I have adapted this recipe from one by Maryam Yassavoli, who is from Sabzevar and runs a home-food cooking school. You can add 4oz/110g of ground lamb to the filling in step 3, and sauté with the onions.
