Barberry preserve is not only delicious as a spread with bread and butter, it also makes a wonderful condiment with kukus/vegetable omelets, roast chicken, or plain rice.
For the barberries: Spread the barberries on a sheet pan and pick over and remove any stems or grit. Place the barberries in a sieve and place the sieve in a large container full of cold water. Allow them to soak for 20 minutes; any grit will sink to the bottom of the container. Take the sieve out of the container and run cold water over the barberries.
