Cumin is the spice par excellence in Kermani cooking for all savory dishes. This seven-spice advieh that is renowned for its use in bread, but I use it in my kitchen for many different dishes because it’s so distinctive, unlike the adviehs from other Iranian regions. I adapted this recipe and most of the recipes in this section from those of Shohreh Amin’s family in Kerman and Rafsanjan. For pastries, Kermanis use the five-spice advieh.
