Method

Osh is generally lighter than halim—a dish of meat, wheat, barley, and spices, slow cooked for many hours and then beaten to a paste. Both can be called porridge in English. We were served this dish as the somewhat lighter osh in Kerman in an old traditional house. I am making it here with bone broth but traditionally this osh is made lamb. This osh also great as a vegetarian dish by replacing the broth with a vegetarian stock and increasing the walnuts in the garnish to 1 cup.
