In Shiraz, this salad is on every table setting for lunch or dinner. They make it without oil, but you can try it both ways to see which you prefer. The dressing should be added just before serving, otherwise the salad becomes soggy and loses its freshness.


  • 2 medium ripe, firm tomatoes, peeled
  • 6 Persian cucumbers or 1 long seedless cucumber, peeled</


  1. Cut the tomatoes and cucumber into 1in/2.5cm cubes and place in a salad bowl with all the rest of the vegetables and herbs. Cover and keep in the fridge.
  2. Meanwhile, to make the dressing: In a small bowl, whisk together all the ingredients for the dressing and set aside.
  3. Just before serving, add the dressing to the salad and gently toss. Serve imm
