This ice dessert, a specialty of Shiraz and a favorite in their ice-cream parlors, is called paludeh (or faludeh). Thee recipe uses store-bought noodles but you can also make your own.
Ingredients
noodles
4oz/110g thin rice stick noodles or rice vermicelli, snipped into 1½in/
For the noodles: In a medium saucepan, bring 8 cups/1.9l water to a boil over medium heat and add the noodles. Boil for 15 minutes
until very tender. Drain immediately in a fine-mesh colander and rinse thoroughly with cold water to give the noodles a shock and stop them cooking further. Chill in the fridge.
