Made from dried anchovies. this smooth, salty, dark brown sauce is used as a condiment in small amounts to enhance the flavor of a dish (in a similar way to sriracha, the Thai hot sauce). It is used with various dishes: eggs, kuku, rice, or braises as well as on bread. I adapted this recipe from one by Halimeh Jonaybi in Evaz.
