I was served this cake with very strong coffee in Bushehr—a marriage made in heaven! However, when testing the recipe, I found that orange juice works much better than the milk traditionally used in the batter.

  • 20 Medjool dates (about 2 cups/480 g), any remaining hard stalk parts removed and pitted

  1. For the dates: Dice the pitted dates into ½in/1cm pieces, then chill in the freezer for 30 minutes.
