Even though much of Iran’s Sistan and Baluchistan province borders Pakistan, its food is not peppery but delicately spiced, much like the food of Kerman on its other border. This fascinating advieh not only adds a distinctive flavor to dishes, but it also acts as a bonding agent. The patties are traditionally dehydrated in the sun, but I dry them in the oven at very low heat for 2 hours.
