I adapted this recipe for yellow kashk porridge (photo opposite) from one by Mahsa Behjati in Zabol. The kashk-e zard powder used here, a nutritious combination of fermented yogurt and bulgur that is quite similar to the Kurdish tarkhineh, is very popular in Sistan. Local peoples combine bulgur, garlic, green cumin seeds, nigella seeds, turmeric, coriander seeds, and salt with yogurt in a cotton sack and hang it outside for 20 days to ferment.
