Cod Roe Mousse

On every fish counter, in season, the roes of cod are piled high – however, it’s not just in season that we consume cod roe. It is a popular topping for Danish children’s packed lunches all year round, often served very simply on a piece of rye bread with remoulade and fried crispy onions on top.
