Lumpfish Roe with Red Onion and Crème Fraîche

There is a song called ‘Sommer og Sol’, meaning ‘Summer and Sun’, by Birthe Kjær… in fact there are countless and rather fabulously ‘happy-go-lucky’ Danish songs. These songs bring with them an incredible feeling deep inside regardless of the season – for example, when it rains, playing these songs brings out the sunshine inside.
